I do the roll thingy like the picture, but when I demonstrate to students I still find some of them tying a single knot randomly somewhere along the length of the thread.
I don’t use a knot though except for tacking and when making soft toys. Never on embroidery, two tiny stitches in one place for most embroidery starts. Is it just me? That is how I was taught.

I learned to use both the knots (finger roll and needle wrap) for sewing and quilting, but like Shirley, learned not to do knots in embroidery.
